Wild Salmon Poke Bowl
Bright, fresh, and deeply satisfying. The sweetness of King Salmon against ponzu and sesame.

Ingredients
- โ1 lb Tidewater King Salmon, cubed
- โ3 tbsp soy sauce or tamari
- โ1 tbsp sesame oil
- โ1 tbsp rice vinegar
- โ1 tsp honey
- โ1 tsp sriracha
- โ2 cups cooked sushi rice
- โ1 avocado, sliced
- โ1 cucumber, sliced
- โSesame seeds, scallions, nori strips
Instructions

Ensure salmon is fully thawed and very cold. Cube into 1-inch pieces.

Whisk soy sauce, sesame oil, rice vinegar, honey, and sriracha.

Toss salmon gently in marinade. Rest 10 minutes in refrigerator.

Season warm rice with rice vinegar and pinch of salt.

Build bowls: rice base, marinated salmon, avocado, cucumber.

Drizzle remaining marinade over top.

Garnish with sesame seeds, scallions, and nori strips.
