With its deep red hue, firm texture, and rich flavor, this fresh frozen Sockeye Fillet is ready for your culinary skills. Each fillet averages approximately 1.7lbs and is ideal for serving around four people. For the best flavor and moisture, we recommend cooking it to an internal temperature of 125°F.

Please note that these fillets are not boneless. Fresh salmon have very stubborn pin bones, and most machine deboning methods can compromise the quality by either mashing the fresh fillet or requiring thawing and refreezing to facilitate bone removal.

Once you receive your package and thaw the salmon before preparation, the bones will naturally loosen, allowing for easy removal with small pliers or by cutting around them with a knife. A video showing easy pin bone removal can be found here.

We have opted once again not to compromise on quality and instead provide Boneless Sockeye Portions if you prefer.

Please note: We strive to offer the finest value available anywhere!  These are wild fish and vary in size and weight.  Due to Fedex weight restrictions, the 24 pack box must stay under 50 pounds.  Occasionally we must add or subtract a fillet or two to stay within the 50 pound threshold... if you find you have fewer than 24 fillets, we didn't short you... it simply means your fillets are bigger and fatter than the average!
